Ingredients
1 pound of penne pasta
2 boneless, skinless chicken breasts, sliced into strips
2 tablespoons olive oil
1 Jar of Big Tone's Homemade Arrabbiata sauce
Grated Parmesan cheese to taste
Salt and black pepper to taste
Fresh basil leaves for garnish (optional)
Red pepper flakes (adjust to taste)
Preparation
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
Season and Cook the Chicken:
Season the chicken breast strips with salt and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook until they are golden brown and cooked through, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
Prepare the Arrabbiata Sauce:
In the same skillet, heat the remaining tablespoon of olive oil over medium heat.
Stir in the Arrabbiata sauce and bring to a simmer. Let it cook for a few minutes to allow the flavors to meld.
(Optional) Add the red pepper flakes. Cook for about 1 minute until fragrant, being careful not to burn the sauce.
Combine Pasta, Chicken, and Sauce:
Add the cooked penne pasta to the skillet with the Arrabbiata sauce. Toss until the pasta is well coated with the sauce.
Add the cooked chicken strips back into the skillet with the pasta and sauce. Toss gently to combine.
Serve:
Divide the Chicken Arrabbiata Pasta among serving plates.
Sprinkle grated Parmesan cheese over each portion.
Garnish with fresh basil leaves if desired.
